not ground malts...
That's totally my fault. I missed asking to grind them when I placed my order. Panic passed fastly, I decided to visit the store. Seoul Homebrew is in Seong-su district, where the famous brewing company "Amazing Brewing Company" is located.

Got my malts ground, bought the ingredient for next batch. Before I go, I tried something could be the most awkward moment for today.
"I'm not sure I can ask this... If you don't mind, if you're not busy now, I carried a beer I brewed with the brewing kit sold from this store. Could you sip a little and tell me what I should do to make this better?"
I'm not a person who socially talented. This is very rare for me to ask like this to people I rarely knew. All I know was I am a brewer, he is a brewer, so maybe... maybe I would not be rejected. And oh my god they were so kind and said ok to me.
They were really kind and encouraged me because they said my brown ale was drinkable, a bit young though. When it is a dark style, the 1st fermentation period should at least be 3 weeks, he told me. My brown beer had 1 week of fermentation, 2 weeks of 2nd fermentation(in a bottle), and then 2 weeks for lagering in a refrigerator. If it is a light one, like IPA - 1st fermentation should last at least 2 weeks. I think the lesson could be adapted to my competition one.
And I learned what is flame-out and cold-crashing, and how those 2 types of adjustments effect to hops then extract oils with different aroma and flavor. I think I can revise my recipe with those tips.
Thanks them for sharing a precious time and bearing my ale!
