25 Feb @ Lock Street Brewing Co.

Today was the 1st day of volunteering at the Lock Street Brewing Co.
Observed can packaging and keg cleaning.

the 1st nozzle: CO2/ 2nd: beer/ 3rd: sensor to finish filling

jokey box to cool kegs. There is 2 chillers inside the box.


spigots of the jokey box(turn on)

CO2 valve with a bright tank. the black hose is for CO2.

CO2 meter. most of jobs needs under 10 psi.

parts of spigots for the jokey box. bronze parts are cheaper than stainless steel but weak for contamination.
  
peracetic acid(peroxyacetic acid or PAA, CH3CO3H)

before filling cans, cans and lids should be sanitized by water sterilized by ozone.

keg washing

  1. hot water(185F) 2~3 min to wash organic debris
  2. cold water rinsing for optimal temperature environment for peroxyacetic acid
  3. peorxyacetic acid 2~5 min/keg. no rinse is needed

iodine as a sugar indicator:

  • if there is a fermentable sugar: turn clear
  • if there is a non-fermentable sugar(starch): stay yellow


whenever changing kegs: head/ color/ aroma/ tastes check
