27 June @ Seoul Brewery

Last week, I luckily got a chance to observe a regular brew day. The beer brewed that day was (dry hopped)California common style that is for the upcoming competition. I remembered that the first batch of the style was a bit murky which turned out polyphenol suspension. Now it became a beautiful reddish easy drink beer with full flavor. 
Reportedly, California common is narrow defined style. It has full flavor, strong unique hop character from traditional American hop(before craft era) which features pine, woody, and herbal. 
The brewery uses public tap water which is good at making brown beer but needs some acid adding in order to brew high quality pale beer. 

this is called 'grant' as a buffer when run-off. 

it is connected to the m/l tun. 


This brewery lives in 70's typical old Seoul style semi two story house(one story+semi basement floor) with modern approach in engineer's way.
